Exotic Shrimp

Serves 4


32 Medium Shrimp
1/2 lb. Celery
1/2 lb. Carrots
1/2 White Onion
4 oz. Butter
10 pieces Dried Apricot
1 Green Apple
2 Rings of Canned Pineapple
1 Can (13.5 oz) Coconut Milk
1 tsp. Tumeric
1 tsp. Curry Powder
1 tsp. Ground Cumin
Salt and Pepper to Taste


  • Finely chop celery, carrots and onion.
  • Core, peel and chop apple.
  • Cut Apricots in half.
  • Cut pineapple rings into chunks.
  • Peel and devein shrimp.

Cooking Instructions

  1. Place celery, carrots, onion and butter in large saucepan over high heat. Stir ingredients.
  2. When onion starts to brown, add apple, apricot, pineapple and shrimp.
  3. Continually toss and sauté for approximately 5-7 minutes.
  4. Add spices and coconut milk to pan and stir to mix ingredients. Turn fire to low and let simmer for 5-7 minutes, continually stirring to keep ingredients from sticking to pan.
  5. Serve with steamed Basmati rice.
